Vegan Lentil Cottage Pie



This vegan lentil cottage pie is a hearty and satisfying dish that will please vegans and non-vegans alike. Lentils provide protein and fiber, while the savory vegetable filling and creamy mashed potatoes create a comforting meal.

Ingredients:

  • 1 cup green lentils, cooked
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup frozen peas
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Preheat oven to 375F 190C

In a large skillet, heat olive oil over medium heat

Add diced onion, carrots, and celery

Cook until softened, about 5 minutes

Add minced garlic, thyme, and rosemary

Cook for another 2 minutes

Stir in cooked lentils, tomato paste, and vegetable broth

Bring to a simmer and cook until the mixture thickens, about 15 minutes

Add frozen peas and cook for an additional 2 minutes

Season with salt and pepper to taste

Transfer the lentil mixture into a baking dish

Spread mashed potatoes evenly over the top

Bake in the preheated oven for 25-30 minutes, or until the mashed potatoes are golden brown

Serve hot and enjoy!
