This gluten-free banana blueberry breakfast bread is tasty and moist, and it's great for breakfast or as a snack.
Ingredients:
- 2 ripe bananas, mashed
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup honey or maple syrup
- 3 eggs
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup fresh blueberries
Instructions:
Warm the oven up to 175F 350C
Add honey or maple syrup, eggs, melted coconut oil, vanilla extract, baking powder, cinnamon, and salt to a large bowl
Then mix in the mashed bananas
Mix everything together well
Add fresh blueberries slowly and carefully
Put the batter into a loaf pan that has been greased
Put it in the oven and bake for 45 to 50 minutes, or until a toothpick stuck in the middle comes out clean
For 10 minutes, let the bread cool in the pan before moving it to a wire rack to cool all the way through
Cut and serve
