Gluten-Free Raspberry Thumbprint Cookies Paleo



These gluten-free raspberry thumbprint cookies are Paleo-friendly and perfect for anyone looking for a delicious treat without gluten or nuts. They are made with almond flour and coconut flour, sweetened with maple syrup, and filled with raspberry jam. They make a delightful snack or dessert for any occasion.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup raspberry jam preferably sugar-free
  • Fresh raspberries for garnish optional

Instructions:

Preheat the oven to 350F 175C

Line a baking sheet with parchment paper

In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and salt

Mix until a dough forms

Scoop out dough and roll into 1-inch balls

Place them on the prepared baking sheet

Using your thumb, make an indentation in the center of each cookie

Fill each indentation with raspberry jam

Bake for 10-12 minutes or until the cookies are golden brown around the edges

Remove from the oven and let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely

Once cooled, garnish each cookie with a fresh raspberry if desired

Pear & Pomegranate Bellini



A delightful twist on the classic Bellini cocktail, this Pear & Pomegranate Bellini is a refreshing and elegant drink perfect for any celebration or special occasion.

Ingredients:

  • 2 ripe pears, peeled and chopped
  • 1 cup pomegranate seeds
  • 1 bottle prosecco, chilled
  • 1/4 cup simple syrup
  • Fresh mint leaves, for garnish

Instructions:

Using a blender, blend the peeled pears until they are smooth

Use a fine mesh sieve to get rid of any solids in the pear puree

In each champagne flute, add the same amount of pear puree

Place some pomegranate seeds on top of each flute

Fill up each flute with prosecco and pour it over the pear puree and pomegranate seeds

Mix everything together slowly

Add some simple syrup to each flute to make them sweet

Add some fresh mint leaves as a garnish

Serve right away and enjoy!

Owl Cake Pops for Owl Birthday Party



These cute cake pops with an owl motif are ideal for a birthday celebration. Not only are they delicious, but they're also a lot of fun to make and eat with loved ones.

Ingredients:

  • 1 box of chocolate cake mix
  • 1/2 cup of unsalted butter, softened
  • 3 large eggs
  • 1 cup of milk
  • 1 teaspoon of vanilla extract
  • 1 cup of chocolate frosting
  • 1 package of chocolate candy melts
  • 1 package of candy eyes
  • Orange and yellow candy melts for beaks
  • Colorful sprinkles for decoration

Instructions:

Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and grease a cake pop mold

Mix the cake mix, eggs, milk, softened butter, and vanilla extract thoroughly in a sizable bowl

Fill each cavity of the cake pop mold with the batter using a spoon

Once a toothpick is inserted, bake for 15 to 20 minutes, or until it comes out clean

Let the cake pops cool all the way through

Once the cake has cooled, crumble it into fine crumbs and combine it with the chocolate frosting until it resembles dough

Form the body and head of an owl out of the cake mixture

Melt the chocolate candy melts in accordance with the directions on the package

Make sure every cake pop is completely covered by dipping it into the melted chocolate

Let the dripping chocolate fall off

Put two candy eyes on each owl, and for the beaks, use orange and yellow candy melts

Use colorful sprinkles as decoration to give it a festive feel

Before serving, let the chocolate solidify and become firm
